School’s out for summer!

It’s great to be back in print! And although we never went away (we published digital issues in May and June – sign up for them here to never miss an issue), it feels right to be back to printing the magazines.

Thanks to all those who sent us words of support and encouragement while we were in lockdown. Here’s something new…

If you fancy a sweet treat, we’ve got a great ‘Molly’s Cookies’ recipe for you to give a go. Perfect now it’s the summer holidays!

  • 125g unsalted butter (softened)
  • 100g light brown soft sugar
  • 125g caster sugar
  • 1 egg (lightly beaten)
  • 1 teaspoon of vanilla extract
  • 225g self-raising flour
  • ½ teaspoon salt
  • 150g chocolate chips (or better still, chocolate broken down into small chunks)

The above will make around 25 cookies in total.

How to make them…

  1. Preheat the oven to 180°C, gas mark 4
  2. Cream together the butter and sugars. Once creamed, combine in the egg and vanilla extract.
  3. Sift in the flour and salt, then the chocolate chips. (I didn’t bother with the sieve and they turned out delicious!
  4. Roll into walnut size balls (for a homemade look), or roll into a long, thick sausage shape and slice to make neater looking cookies.
  5. Place on a baking tray – you can used ungreased baking paper but they are fine on just the baking tray. Ifyou want really gooey cookies, then you’ll only need to bake them for around 7 minutes. But if you want them golden around the edges, bake them for 10 minutes.

When you take them out of the oven, leave them to harden for a minute before transferring them to a wire cooling rack. Enjoy!

Late last month Lauretta attended the virtual Skills 30:30 event, organised by the FSB in conjunction with the Harris Federation. The Year 13 students from the Harris Academy had the chance to virtually meet local employers.

A huge welcome to People In Sync and Horton Driveways as new advertisers for July, and in terms of networking we’ve also been attending Athena Bromley online Zoom parties and we popped in as a guest on the Lightning BNI networking event.

We’re hoping that it won’t be too long until the virtual online networking meetings become in person meetings, as long as it’s safe to do so of course.
